Lamb & Feta Pitas
  1. Combine the lamb mince, crushed garlic, and freshly chopped mint in a bowl and mix together.

  2. Divide the mixture into 12 equal portions and shape each portion into a patty.

  3. Season the patties generously with salt and pepper.

  4. Heat a griddle pan or fry pan over medium-high heat and lightly brush with olive oil.

  5. Cook the patties for 4-5 minutes per side until golden brown and cooked through.

  6. Warm the pita breads in the microwave for a few seconds.

  7. To assemble, place two lamb patties in each pita bread, top with diced tomatoes and crumbled feta cheese.
