Pat ribs dry and season both sides generously with salt and pepper. Add 2 TBSP cooking oil to a dutch oven and once HOT, brown on both sides, about 3-4 min each. * Cook in batches to not over crowd your pot, and remove when done.
Remove browned ribs from your pot and set aside (do not drain juice/brown bits). Then add bacon, onion, garlic - sauté until browned. Add tomato paste, parsley, brown sugar, red wine, water, salt and pepper. Combine.
Return beef ribs to the sauce and place fresh thyme and cheese rind on top. Cover and place on center rack in oven.
Cook at 300° for 3 hours or until ribs are fork tender. Shred ribs, remove sprigs of thyme & rind.
Serve over pappardelle and top with fresh grated cheese. Enjoy!
