Rigatoni Alla Zozzona
  1. Cook guanciale or pancetta in a pot

  2. Add pork sausages with fennel seeds, paprika, and chilli flakes

  3. Stir in tomato puree

  4. Add water and bring to a simmer

  5. Add fresh rigatoni and cook until pasta is tender

  6. Beat the egg and stir into the pasta off heat

  7. Mix in pecorino cheese

  8. Season with salt and black pepper to taste

  9. Serve with additional pecorino cheese
