  1. Preheat oven to 350 degrees F

  2. Add bell pepper, sweet potato, yellow onion, cashews, carrot, and garlic into a 9x13 roasting pan and coat in olive oil and mix to combine with salt and pepper to taste

  3. Roast for 30-40 minutes until potatoes are fork tender and squeeze garlic out

  4. In the last 10 minutes of roasting, boil pasta water, chop broccoli and add it to the pasta

  5. Add roasted vegetables and sauce ingredients (white miso paste, salt, pepper, cayenne, nutmeg, nutritional yeast, and soy milk) to a high speed blender and blend until smooth

  6. Pour sauce over noodles and broccoli and enjoy

  7. Store in fridge up to 3 days
