Boil sweet potatoes whole until just fork-tender (15–20 mins)
Preheat oven to 425°F (220°C)
Place boiled sweet potatoes on a parchment-lined tray
Use the bottom of a glass to smash each one flat
Drizzle generously with olive oil, season with salt and pepper
Roast for 25–30 mins until crisp and golden
Meanwhile, blend feta, yogurt, lemon zest, and olive oil until smooth
Spread whipped feta on serving plate
Top with crispy smashed sweet potatoes
Drizzle hot honey over everything, finish with pistachios and herbs
