Levain-style Matcha White Chocolate Cookies
  1. Start by cutting cold butter into small cubes and then creaming it with your sugars.

  2. When it is fully creamed add your two eggs and vanilla and mix.

  3. In a separate medium bowl whisk your dry ingredients together.

  4. Add to your wet ingredients in 2-3 batches. Don’t overmix! Just mix until incorporated.

  5. Gently fold in your chocolate chips.

  6. Form cookie mounds without rolling them, about 100g each.

  7. Place in fridge overnight.

  8. Preheat your oven to 400 F and bake for 10 minutes the next day. Don’t open the oven at all during the baking process!
