Pat tofu dry, tear into chunks, combine with cornstarch and salt.
Fry in oil until crispy or bake at 180C/360F for 20mins (for the longer than 10 minutes version).
For sauce: mix soy sauce, vinegar, agave, optional hot sauce, garlic, ginger powder, cornstarch, water.
Add to hot pan, stir while heating until thickened. Stir in tofu.
