Homemade Pizza
  1. Whisk water and yeast together, add honey and whisk again

  2. Add flour and salt, stir until all flour is combined

  3. Shape dough into a round, cover and rest for 20-30 minutes

  4. Perform 4 stretch and folds by wetting your hand, grabbing dough, folding down, turning bowl 90°, and repeating

  5. Flip dough, fold in half, cover for another 20-30 minutes

  6. Repeat 4 stretch and folds

  7. Cover with cling film and refrigerate for 10-48 hours

  8. Remove dough from fridge and generously flour work surface

  9. Turn out dough and stretch gently into a rectangle

  10. Cut into 6 or 8 pieces depending on desired size

  11. Stretch, roll up, turn and roll again, then shape into balls

  12. Place on floured surface, flour tops generously, cover with tea towel for 40 minutes

  13. Preheat oven to 240°C with parchment and oil in baking dish

  14. Dimple a dough ball, place on dish and add pizza sauce

  15. Bake for 8-10 minutes on medium level

  16. Remove, quickly add cheese, return to oven

  17. Bake for 10-12 minutes more (use pizza setting for last 5 minutes if available)
