Whisk water and yeast together, add honey and whisk again
Add flour and salt, stir until all flour is combined
Shape dough into a round, cover and rest for 20-30 minutes
Perform 4 stretch and folds by wetting your hand, grabbing dough, folding down, turning bowl 90°, and repeating
Flip dough, fold in half, cover for another 20-30 minutes
Repeat 4 stretch and folds
Cover with cling film and refrigerate for 10-48 hours
Remove dough from fridge and generously flour work surface
Turn out dough and stretch gently into a rectangle
Cut into 6 or 8 pieces depending on desired size
Stretch, roll up, turn and roll again, then shape into balls
Place on floured surface, flour tops generously, cover with tea towel for 40 minutes
Preheat oven to 240°C with parchment and oil in baking dish
Dimple a dough ball, place on dish and add pizza sauce
Bake for 8-10 minutes on medium level
Remove, quickly add cheese, return to oven
Bake for 10-12 minutes more (use pizza setting for last 5 minutes if available)
