Slice the cabbage very thin and set aside
In a medium frying pan or cast-iron skillet over medium-high heat, add 2 tablespoons of oil and cook the shallots until they soften
Turn the heat to high, add the cabbage and cook for 5-6 minutes, then remove from heat
In a bowl, whisk together the eggs and the cabbage mixture until well combined
Heat 1 tablespoon of oil in a small pan on medium heat and add the cabbage and egg mixture, moving it around with a spatula for even cooking for about 4 minutes
Carefully slide the omelette onto a plate, flip both the plate and pan together, and slide the omelette back into the pan to cook the other side for 3-4 minutes until golden
Transfer the omelette to a plate and spread sweet chili sauce on top
Drizzle mayo and sprinkle furikake evenly over the omelette
