Heat 1 tbsp oil in a pan over medium-high heat.
Add 1 small diced onion, 3 Anaheim green peppers or 2 bell peppers, and 1 jalapeño. Sauté for 3 minutes.
Add 3 small diced Roma tomatoes. Cook for 1 minute.
Add 3 minced garlic cloves. Cook for 30 seconds.
Add 2 lbs ground beef. Season with 4 tsp chili powder/paprika, 1 tsp black pepper, 1 tsp ancho powder, 2 tsp cumin, 2 tsp oregano, and salt to taste.
Break down and mix the meat. Cook for 4 minutes.
Add 4 medium diced potatoes. Cook for 5 more minutes.
Reduce heat to medium. Dissolve 2 tbsp APF and 4 tsp beef bouillon in 2 cups broth/water. Pour over the meat mixture.
Cover and cook for 12-15 minutes until potatoes are fully cooked.
Taste and adjust salt if needed.
Turn off heat and optionally add chopped cilantro.
