Pumpkin Soup
  1. Cook the bacon at this time if you will be adding it. Chop into square pieces once partially cooled after cooking. You may do step 2 while cooking the bacon to save time.

  2. Prepare onions and measure out other ingredients.

  3. Using an appropriately sized soup pot for the fluid ingredients, heat oil or bacon grease on medium heat.

  4. Add onions. Stir and turn frequently until some start to yellow.

  5. Add all spices (garlic, black pepper, paprika, thyme, oregano, basil, and chili flakes) and stir to mix throughout. Cook until onions are medium soft.

  6. Add bacon, pumpkin, and broth.

  7. Cook on medium heat for 10 minutes, stirring occasionally.

  8. Ready to serve. Salt and pepper to taste. Pairs well with a crunchy bread. Great way to use up heels or a slightly stale bread.
