Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper or a silicone baking mat.
Cream the Butter and Sugar. Use softened butter and mix until fluffy.
Add egg and vanilla to creamed butter.
Mix the dry ingredients together separately (flour, baking powder, and salt). Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.
Make balls out of 1 T of dough, roll ball in course sugar, and place on baking sheet 2” apart
Press down with fork and then again 90 degrees to make crisscross.
Bake 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
