Prepare the Bacon
In a large skillet, cook the bacon over medium heat until crispy.
Remove the bacon and place it on paper towels to drain excess fat. Leave about 1 tablespoon of bacon fat in the pan for flavor.
Sauté the Mushrooms
Add the olive oil and butter to the skillet with the bacon fat. Heat over medium-high until the butter melts.
Add the garlic and cook for 30 seconds, just until fragrant.
Add the mushrooms and cook for 5–6 minutes, stirring occasionally, until golden brown and tender.
Make the Creamy Sauce
Lower the heat to medium. Add the cream cheese cubes, stirring gently until melted and smooth.
Pour in the heavy cream, then stir in Parmesan cheese, Italian seasoning, oregano, salt, and black pepper.
Simmer for 4–5 minutes, stirring often, until the sauce thickens and coats the mushrooms.
Add the Bacon and Finish
Return the crispy bacon to the skillet and stir gently to combine.
Remove from heat and sprinkle with fresh parsley before serving.
Serve and Enjoy
Serve hot as a side dish with roasted chicken, grilled steak, or pasta — or enjoy it as a comforting main dish with crusty bread to soak up the sauce.
Chef’s Tips
For extra flavor, try adding a splash of chicken broth or a pinch of crushed red pepper flakes.
You can use a mix of cremini and white mushrooms for richer flavor.
To make it lighter, substitute half of the cream with milk or broth.
