No-bake Coconut Cheesecake
  1. Mix the crushed biscuits with the melted butter and press into a springform pan to form the base, then chill in the fridge.

  2. In a separmbine the mascarpone, cream cheese, and Greek yogurt until smooth.

  3. Stir in the melted white chocolate and shredded coconut, then pour the filling over the chilled base and place back in the fridge.

  4. For the topping, mix the coconut milk with melted white chocolate and pour over the cheesecake.

  5. Finish with a sprinkle of shredded coconut and let it set in the fridge for at least 3 hours before serving
