Greek Chicken Lunch Bowls
  1. Brine and marinade the chicken in the mayo, lemon juice, oregano and rosemary for at least 1 hour up to overnight

  2. Combine the rice, lentils, and quinoa in rice cooker with water and cook until done

  3. After chicken has been sitting, bake in a 375 degree oven until done, then broil for 5 ish minutes until there is some color on the chicken

  4. At the same time, cook the cup up mushrooms and red onion until roasted

  5. Put 1 cup on lettuce, ¼ a cup of cucumber on top of ½ a cup of the rice mixture, with ½ a cup of the chicken, and a ¼ cup of the onion and mushroom mixture.
