Jam and crumpet custard bake
  1. Butter a 16cm deep, round tin. Cut the crumpets in half to create half moons, then spread the jam onto the crumpets holey side. Squidge them into the tin, turning some of crumpets hole side down.

  2. Heat the milk and cream in a small saucepan until gently steaming.

  3. Meanwhile, whisk together the egg, golden caster sugar, custard powder, vanilla extract and a pinch of salt in a medium bowl. Slowly stream in the milk, whisking all the while, until you have a homogenous custard mix.

  4. Pour gently over the crumpets. Sit in the fridge to absorb for 30 mins. Sprinkle the top with the demerara sugar. Air-fry at 150C for 25 mins. Serve with cold cream.
