Filipino Chicken Adobo
  1. Make the marinade: In a small bowl, mix together all seasonings (soy sauce, vinegar, black pepper, garlic, brown sugar, bay leaves, and Worcestershire/fish sauce, if using). Make sure to taste the marinade and add more of any seasonings as needed until it suits your taste.

  2. Poke some holes in the chicken pieces with a knife or fork. Combine the chicken and the marinade in a heavy-bottomed pot and mix it around so that all chicken pieces are coated in marinade.

  3. Cover the pot with the lid and put it in the fridge to marinate - for about 8 hours/overnight for best results, but 30 minutes to 1 hour is OK if you don’t have that much time. If you can, mix around or turn the chicken pieces over about halfway through marinating.

  4. Brown the meat. Put a little cooking oil in a shallow pan and fry the chicken on high heat until just browned. Return the chicken to the pot.

  5. Bring the pot to a boil on medium-high heat with the lid on. Let boil on medium-high for 5-10 minutes.

  6. Reduce heat to a medium simmer. Simmer for about another 10 minutes.

  7. Reduce heat to a low, gentle simmer. Mix the chicken around. Simmer for another 30 minutes.

  8. Serve with fresh jasmine rice.
