Prepare a cream of asparagus
Cook the asparagus stems in butter and oil in a saute pan. Add salt and pepper, and 2 ladles of water. Cover and simmer for 20 minutes.
Place the speck in a cold pan, and sear over low heat.
Remove the speck from the pan and set aside, and cook the asparagus tips in the same pan.
Cook the pasta as directed
While the pasta cooks, put the asparagus, Grana Padano, basil, a burrata (broken apart), and a turn of olive oil in a food processor and blend until a rough sauce.
Toss the pasta with the asparagus cream and speck.
Plate, and offer additional grated cheese at the table.
