Preheat the oven to 350°F and line a baking sheet with parchment paper. Lightly coat with nonstick spray.
Add the cottage cheese, egg, and garlic powder to a blender and blend until smooth.
Transfer the mixture to a bowl and fold in the almond flour and baking powder until combined.
Divide the dough into 4 equal portions on the prepared baking sheet.
Flatten each portion into a 4- to 5-inch round. Sprinkle with everything bagel seasoning, if using.
Bake for 15 to 18 minutes, or until golden on top.
Let cool before using for sandwiches.
