Caramelize Apples: Melt butter in a skillet, add apples, cook 3–4 min, then add maple syrup. Simmer until golden and glossy.
Assemble Brie: Roll puff pastry, place brie in center, spread apple butter and caramelized apples over top.
Wrap and Brush: Fold pastry over brie, seal edges, brush with egg wash, and sprinkle with sugar.
Bake: Preheat oven to 400°F (200°C). Bake 20–25 minutes until golden.
Serve: Rest 10 minutes, garnish with thyme, and serve warm.
