Carrot Cake
  1. Cream together ½ cup unsalted butter and granulated sugar

  2. Add room temperature eggs and vanilla extract, mix well

  3. In a separate bowl, combine all purpose flour, baking soda, baking powder, kosher salt, and ground cinnamon

  4. Fold dry ingredients into wet ingredients

  5. Stir in coconut oil and grated carrots

  6. Pour batter into 2 8-inch round cake pans or 9x13 rectangular cake pan

  7. Bake until a toothpick inserted in the center comes out clean

  8. For frosting, beat cream cheese and ½ cup unsalted butter until smooth

  9. Gradually add powdered sugar and vanilla extract, beat until fluffy

  10. Frost cooled cakes
