Add room temperature eggs and vanilla extract, mix well

Fold dry ingredients into wet ingredients
Stir in coconut oil and grated carrots
Pour batter into 2 8-inch round cake pans or 9x13 rectangular cake pan
Bake until a toothpick inserted in the center comes out clean
For frosting, beat cream cheese and ½ cup unsalted butter until smooth
Gradually add powdered sugar and vanilla extract, beat until fluffy
Frost cooled cakes
