Preheat oven to 400 degrees and grease a baking dish.
Add 2 cups cooked chicken, 1 cup mushrooms, 1 cup spinach, and 1 cup mozzarella cheese. Mix until all ingredients are dispersed.
Add 1.5 cups uncooked orzo and gently mix.
Pour 2 cups chicken broth and 1 cup water over ingredients, then add ¾ cup ricotta cheese. Mix to combine.
Add in seasonings and squeeze in juice of lemon. Stir well.
Bake for 30 minutes then remove from oven to top with additional mozzarella.
Return to oven to bake for an additional 10 minutes.
