Honey-oat Pain De Mie
  1. Place the ingredients in a mixing bowl.

  2. Combine all of the ingredients, and mix until cohesive.

  3. Cover the bowl, and let the dough rest for 20 minutes.

  4. Knead the dough for about 7 minutes.

  5. Place the dough in a lightly greased bowl and let it rise for 1 to 1 ½ hours.

  6. Gently deflate the dough, and shape it into a 9" log.

  7. Place the log in a lightly greased 9" pain de mie pan.

  8. Let the dough rise until it's about 1" from the top of the lid, 60 to 90 minutes.

  9. Preheat the oven to 350°F.

  10. Bake the bread for 30 minutes, then remove the lid and bake for an additional 5 minutes.

  11. Turn the loaf out of the pan onto a rack and cool completely before cutting.
