Herb Vinaigrette
  1. Combine ⅓ cup oil, ⅓ cup vinegar, 3 tablespoons fresh herbs (or 1 tablespoon dried), 2 tablespoons shallot, 2 tablespoons lime (or lemon) juice and ¼ teaspoon each salt and pepper in a jar with a tight-fitting lid. Cover and shake until well combined.
