Chili Cheese Pasta (one Pot)
  1. Heat olive oil in a large pot over medium-high heat

  2. Add diced poblano peppers and yellow onion, cook until browned

  3. Add minced garlic, diced chipotles in adobo, and tomato paste, cook for about 5 minutes

  4. Add the lean beef or bison and sear until fully cooked through

  5. Add chili seasoning (salt, chili powder, onion powder, cumin, curry powder, and smoked paprika)

  6. Add fire-roasted diced tomatoes, pinto beans, lentils, and chopped cilantro stems

  7. Bring to a simmer and cook for 10-15 minutes

  8. Taste and adjust seasonings as needed

  9. Add beef bone broth, water, and soy sauce to the pot

  10. Pour whole wheat pasta directly into the pot and stir to combine

  11. Cover and cook for about 20 minutes

  12. Remove lid and simmer for another 5 minutes

  13. Stir in shredded sharp cheddar cheese and Greek yogurt or skyr

  14. Taste and adjust seasoning one final time

  15. Serve garnished with chopped cilantro leaves
