Twice Baked Potatoes
  1. Rinse your potatoes under cold running water.

  2. Preheat oven to 400f.

  3. Place potatoes on a baking tray lined with parchment paper.

  4. Using a fork carefully make several holes through the skin of your potatoes.

  5. Coat them with olive oil and sprinkle with salt, bake for 60-70 minutes depending on size.

  6. On a parchment lined baking tray lay out your bacon and bake for approximately 15 minutes at 400f or until crispy.

  7. Once cooked and cooled, slice into bits.

  8. Once potatoes are cooked allow to cool for five minutes then slice the top off and carefully scoop out the potato into a bowl.

  9. This part is optional but I like to rice them at this point for a smoother texture.

  10. Then we add warm cream and butter, green onion, sour cream, bacon, cheese, salt and pepper.

  11. Mix well with a spatula then put this back inside the potato skins.

  12. Once filled top with more cheese and bake at 400f for another 15minutes.

  13. When they come out top with sour cream, bacon, and green onions for garnish.
