  1. Simmer tofu until the stock and seasonings have been absorbed, then drain and leave to cool.

  2. Pat with a paper towel if still quite wet.

  3. Whisk dressing ingredients until smooth.

  4. Mix tofu with cucumber, carrot, spring onions, apple, coriander, crispy onions, and sesame seeds.
