Hot Lemon, Ginger And Chilli Drink For When You’ve Got The Lurg
  1. Start with a big pot. A stock pot of some sort would be ideal.

  2. Put lots of water in the pot (about three litres).

  3. Put the water on to boil while you zest the lemons.

  4. Add the zest to the water, then cut the lemons in half and squeeze the juice straight into the pot.

  5. Chop the remaining lemon bits and throw those in the pot.

  6. Grate the ginger and add to the pot (no need to peel).

  7. Halve and de-seed the chillies and add to the mixture.

  8. Break up the cinnamon stick and add along with the star anise.

  9. Once boiling, stir, put the lid on, turn the heat down and simmer.

  10. Add sugar to taste after simmering.

  11. When cooled, sieve the mixture and decant into jugs/bottles.

  12. To drink, heat up enough to fill a mug and stir in some manuka honey.
