Soak the cashews in water for at least 4 hours or overnight.

Add the cashews, water, lemon juice, apple cider vinegar, nutritional yeast, and salt to a high-speed blender or food processor.
Blend until smooth and creamy.
Pour the mixture into a cheesecloth-lined mold or container.
Refrigerate for at least 4 hours or until firm.
Slice and serve as desired.
