Zesty Lemon Sugar Cookies
  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.

  3. In a large bowl, cream together the softened butter and 1 ½ cups granulated sugar until light and fluffy. Beat in the egg, vanilla extract, almond extract, lemon zest, and lemon juice until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Roll dough into 1-inch balls and roll each ball in the remaining ¼ cup granulated sugar to coat.

  6. Place the dough balls onto the prepared baking sheets, about 2 inches apart. Use the bottom of a glass to gently flatten each cookie.

  7. Bake for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 2 minutes before transferring to a wire rack to cool completely.
