Raw Vegan Gingerbread Cookies
  1. Soak the dates in a little hot water (just enough to cover) for 15 mins, before draining and reserving a little of the liquid.

  2. Make ‘chia eggs’ by mixing the chia seeds and water together.

  3. Place all the ingredients apart from the ground almonds into a high-speed blender and blitz.

  4. Add the ground almond and pulse until well combined.

  5. Tip the dough into a bowl and chill for 15-20 mins.

  6. Then roll out the dough and cut into shapes with cookie cutters.

  7. Chill until ready to serve.
