Preheat oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
In a large bowl, mix together cottage cheese, applesauce, eggs, maple syrup, and vanilla extract until smooth.
Stir in grated carrots, almond flour, baking powder, cinnamon, nutmeg, salt, and walnuts until just combined.
Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
Allow to cool in the pan for 10 minutes, then lift out using the parchment paper and cut into bars.
