3 Score the cream cheese with a sharp knife in a criss-cross pattern
4 Season cream cheese.
5 Set smoker to 225° F.
6 Smoke for 2.0 hours.
7 Add toppings while smoking for the last 30 mins.
8 Layer chopped corn beef, then sour kraut, and top with Swiss Cheese.
9 Remove from smoker
10 Drizzle with Thousand Island Dressing.
11 Serve with crackers, pita chips, mini pumpernickel bread, rye chips etc
