Healthy Cabbage Enchiladas
  1. Prep the cabbage: Bring a large pot of water to a boil. Add cabbage leaves and boil 2–3 minutes until softened. Drain and set aside.

  2. Cook the filling: Heat avocado oil in a large skillet over medium heat. Add onion and bell pepper and sauté 3–4 minutes. Add ground beef and season with salt, pepper, onion powder, and garlic powder. Cook until browned. Stir in black beans and corn.

  3. Layer the enchiladas: In a baking dish, add a thin layer of enchilada sauce. Layer: Cabbage leaves → meat mixture → enchilada sauce → cheese. Repeat layers and finish with cheese on top.

  4. Bake: Cover with foil and bake at 350°F for 20–25 minutes until bubbly and heated through.
