Mash the cooked potatoes to a slightly chunky consistency and let them cool slightly
Add the scallions, parsley, ground beef, salt, pepper, turmeric, garlic powder, baharat and egg to the potatoes
Mix very well until evenly combined
Open up each pita half and stuff it with the beef aruk mixture
Pour 5 tablespoons of olive oil into a grilling pan on medium heat
Sear each stuffed pita face down for 4 minutes until it gets a nice brown color
Sear both sides of the pita for 2-3 minutes on each side
Spray olive oil or avocado oil on top of the pitas
Transfer to a preheated oven at 400F/200C for 8 more minutes
Serve with tahini, amba, green schug, and sumac onions
