Preheat your air fryer to 200°C (400°F).
Wash, dry, and prick the sweet potatoes with a fork.
Air fry for 35–45 minutes, flipping halfway, until crispy and soft inside.
(Optional: blast at 220°C for an extra 3–5 minutes to crisp the skin.)
In a pan over medium heat, cook the ground beef until browned.
Add 1 packet taco seasoning, 1 tbsp tomato purée, 1 tsp paprika, 1 tsp garlic powder, and 1 tsp adobo seasoning.
Stir well and cook for another few minutes until fully combined and fragrant.
In a small bowl, mix together 3 tbsp honey, ½ tsp chilli flakes, ¼ tsp garlic powder, and ¼ tsp paprika.
Stir well. (Optional: warm in the microwave for 5–10 seconds to make it easier to drizzle.)
Slice open the crispy sweet potatoes.
(Optional) Add a little butter and a handful of mozzarella inside.
Pile on the seasoned taco beef.
Top with diced avocado and a spoonful of cottage cheese.
Drizzle generously with hot honey.
Finish with fresh rocket if using.
(Optional) Add extra red pepper flakes for more heat!
