Crispy Air-fried Sweet Potatoes Stuffed With Spicy Taco Beef, Cottage Cheese, Avocado, And A Drizzle Of Hot Honey
  1. Preheat your air fryer to 200°C (400°F).

  2. Wash, dry, and prick the sweet potatoes with a fork.

  3. Air fry for 35–45 minutes, flipping halfway, until crispy and soft inside.

  4. (Optional: blast at 220°C for an extra 3–5 minutes to crisp the skin.)

  5. In a pan over medium heat, cook the ground beef until browned.

  6. Add 1 packet taco seasoning, 1 tbsp tomato purée, 1 tsp paprika, 1 tsp garlic powder, and 1 tsp adobo seasoning.

  7. Stir well and cook for another few minutes until fully combined and fragrant.

  8. In a small bowl, mix together 3 tbsp honey, ½ tsp chilli flakes, ¼ tsp garlic powder, and ¼ tsp paprika.

  9. Stir well. (Optional: warm in the microwave for 5–10 seconds to make it easier to drizzle.)

  10. Slice open the crispy sweet potatoes.

  11. (Optional) Add a little butter and a handful of mozzarella inside.

  12. Pile on the seasoned taco beef.

  13. Top with diced avocado and a spoonful of cottage cheese.

  14. Drizzle generously with hot honey.

  15. Finish with fresh rocket if using.

  16. (Optional) Add extra red pepper flakes for more heat!
