Poke holes in a large washed sweet potato, then microwave for 6-10 mins depending on size and microwave power, flipping halfway through
Once the potato is soft, let sit until warm, then remove the peel and mash into a purée (should make around 1.5 cups)
Mix purée with 2 cups of all purpose flour, 1 tsp of salt and 2 Tbsp oil
Knead into a dough, and add in more flour/water as needed to reach a soft pillowy dough
Flour your surface and divide the dough into 10 portions, then roll into balls
Roll out each dough ball individually with flour on top to prevent sticking, into a thin round sheet
Brush off any flour from the dough sheet, then place in a non-stick pan over medium-high heat
Turn every 30 seconds or so to avoid burning for about 3 mins until lightly charred
Brush with butter/oil/ghee on the last turn, then remove and let cool on a wire rack
