    Wet Ingredients

  1. Preheat oven to 300 degrees F. Lightly grease a baking sheet, set aside.

  2. In a large bowl mix together oats, coconut, cinnamon, salt and pecans. Set aside.

  3. Combine melted coconut oil (or butter), honey and vanilla in a small bowl.

  4. Add the wet ingredients to the dry ingredients and stir to combine.

  5. Spread the granola mixture in an even layer on the prepared baking sheet.

  6. Bake the granola for 25 minutes or until golden brown, stirring halfway through baking. It may feel soft when you remove it from the oven, but it gets harder and crunchier as it cools, so please be careful and do not over-bake.

  7. Allow the granola to cool and eat it with your favorite yogurt or milk! Store in an airtight container at room temperature.
