Combine the dry ingredients in a bowl.
Combine the egg, oil and peanut butter. Whisk together. Add milk and combine thoroughly.
Gently add the dry ingredients, a bit at a time, to the wet ingredients and mix well.
Place a small amount of vegetable oil or shortening in a pan set over medium heat. Spoon the batter into the pan. Cook for about 3 minutes per side. Serve with maple syrup or whipped cream, if desired.
