Crispy Banana Spring Roll
  1. Whisk egg and milk in a shallow bowl

  2. Dip 1 rice paper sheet into the mixture for a few seconds until soft then lay flat. Stack the second sheet on top

  3. Mix cream cheese, yoghurt and protein powder. Spoon into the centre, add banana slices then sprinkle with erythritol

  4. Fold the sides in and roll up tight like a spring roll

  5. Air fry at 170C (340F) for 12 to 16 minutes, flipping halfway until golden and crisp. Alternative: Oven 180C (355F) for 18 to 20 minutes, or pan fry, or deep fry
