Chicken Gnocchi Choke Me Soup
  1. Season chicken breasts with salt, black pepper, and your preferred seasoning blend. Cook until golden and set aside to rest.

  2. In a pot, melt butter and sauté shallots and garlic until translucent.

  3. Add sun-dried tomatoes and tomato paste, cook for a few minutes.

  4. Pour in chicken stock and bring to a boil.

  5. Add cooked chicken, heavy cream, and Parmigiano Reggiano, simmer for about 10 minutes.

  6. Stir in gnocchi and cook according to package instructions until they float to the surface.

  7. Add spinach and cook until wilted.

  8. Season with salt and pepper to taste and serve hot.
