Cottage Cheese Fudge
  1. In a high-speed blender or food processor, blend the cottage cheese until it reaches a smooth and creamy consistency.

  2. In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring after each, until fully melted and smooth.

  3. In a mixing bowl, combine the blended cottage cheese, melted dark chocolate, and vanilla extract. Mix thoroughly until all ingredients are well incorporated.

  4. Line a small square or rectangular pan with parchment paper, leaving some overhang for easy removal.

  5. Pour the fudge mixture into the prepared pan, spreading it evenly with a spatula.

  6. Place the pan in the refrigerator and let the fudge set for at least 2–3 hours, or until firm.

  7. Once set, use the parchment paper overhang to lift the fudge from the pan. Place it on a cutting board and cut into small squares or bars.

  8. Serve immediately. For a firmer texture, keep the fudge refrigerated until ready to serve.
