Blitz butter, plain flour, egg yolk, salt, and water together until a soft dough forms, adding more water as needed
Press pastry into a 12 inch round tart tin
Optional: blind bake pastry for 20 minutes with weights for a darker crust
Blitz together caster sugar, almond meal, butter, and eggs to make the frangipane
Spread fruit mince over the pastry base
Top with frangipane mixture
Bake at 200°C for 25-30 minutes or until golden brown
Dust with icing sugar and serve with vanilla chantilly
