Fruit Mince Frangipane Tart

  1. Blitz butter, plain flour, egg yolk, salt, and water together until a soft dough forms, adding more water as needed

  2. Press pastry into a 12 inch round tart tin

  3. Optional: blind bake pastry for 20 minutes with weights for a darker crust

  4. Blitz together caster sugar, almond meal, butter, and eggs to make the frangipane

  5. Spread fruit mince over the pastry base

  6. Top with frangipane mixture

  7. Bake at 200°C for 25-30 minutes or until golden brown

  8. Dust with icing sugar and serve with vanilla chantilly
