  1. Prepare the Dough: Allow the pizza dough to come to room temperature for about 20 minutes to facilitate easier stretching.

  2. Preheat the Oven: Set your oven to 450°F (232°C). Place a baking sheet inside to preheat as well.

  3. Divide and Roll Out Dough: On a lightly floured surface, divide the dough into two equal portions. Roll each portion into a circle approximately 8 inches in diameter.

  4. Assemble the Filling: In a mixing bowl, combine the ricotta, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Spread a layer of pizza sauce on one half of each dough circle, leaving a 1-inch border. Distribute the cheese mixture over the sauce and top with pepperoni slices.

  5. Seal the Calzones: Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, then crimp with a fork to ensure closure.

  6. Apply Egg Wash and Vent: Transfer the calzones to a parchment-lined baking sheet. Brush the tops with the beaten egg and cut two small slits on top of each calzone to allow steam to escape.

  7. Bake: Place the calzones in the preheated oven and bake for 12-15 minutes, or until they are golden brown and the crust is cooked through.

  8. Cool and Serve: Remove from the oven and let the calzones cool for a few minutes before serving. Enjoy with additional pizza sauce for dipping if desired.
