Assemble the Filling: In a mixing bowl, combine the ricotta, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Spread a layer of pizza sauce on one half of each dough circle, leaving a 1-inch border. Distribute the cheese mixture over the sauce and top with pepperoni slices.
Seal the Calzones: Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, then crimp with a fork to ensure closure.
Apply Egg Wash and Vent: Transfer the calzones to a parchment-lined baking sheet. Brush the tops with the beaten egg and cut two small slits on top of each calzone to allow steam to escape.
Bake: Place the calzones in the preheated oven and bake for 12-15 minutes, or until they are golden brown and the crust is cooked through.
