Prepare the tofu by cutting it into bite-sized pieces
Slice the leek into rounds
Mince or slice the ginger
Combine all sauce ingredients in a bowl: light soy sauce, dark soy sauce, mirin, vegan oyster sauce, sesame oil, white pepper, and water
Heat a pan and add the tofu pieces
Add the leek, star anise, and ginger to the pan
Pour the sauce mixture over the ingredients
Simmer until the tofu absorbs the flavors and the leek becomes tender
Serve hot while still warm
