Mini Lemon Coffee Cakes
  1. Preheat oven to 350 F

  2. Oil and add a parchment round to four, 4-inch cake pans

  3. Stir together ingredients and refrigerate until ready to use

  4. Combine the flour, sugar, baking powder and salt, set aside

  5. Mix together the greek yogurt, oil, eggs, lemon juice and lemon zest

  6. Add the wet ingredients to the dry and stir to combine

  7. Evenly distribute the batter between the prepared cake pans

  8. Top them with the crumb topping

  9. Bake for 25-30 minutes, until toothpick inserted in center comes out clean

  10. Cool completely

  11. Mix together the powdered sugar and lemon juice

  12. Drizzle over cool cakes
