Tofu Bell Pepper Stir Fry
  1. Whisk together all sauce ingredients until smooth. Set aside.

  2. Heat 1 tablespoon oil in a wok or skillet. Add tofu cubes and cook until golden brown on all sides. Remove and set aside.

  3. Add remaining oil to the pan. Stir fry bell pepper, broccoli, carrots, onion, garlic, and ginger over high heat for 2–3 minutes.

  4. Return tofu to the pan, pour in sauce, and stir for 1–2 minutes until thickened.

  5. Serve immediately over rice or noodles.
