Wash and dry potatoes. Rub with olive oil and bake until fork-tender.
Cover chicken in buttermilk. Add hot sauce and seasonings. Let marinate.
Season flour with same seasonings.
Remove insides of potatoes. Add corn, cheddar cheese, sour cream, heavy cream, garlic pepper, and salt. Mix together.
Add sliced cheese to bottom of potato skins. Add mashed potato mixture. Top with shredded cheddar cheese and bake.
Cover chicken in flour mixture. Fry in batches.
Add chicken to tops of potatoes. Drizzle gravy.
