Preheat a cast iron skillet on a medium heat.
Add oil.
Be sure to pat your Salmon dry and season it generously.
Gently place your Salmon into the pan presentation side first. Cook until it's easy to lift the Salmon off the cast iron pan, about 5-6 minutes each side.
Once cook, set aside and start on your Juke Joint Butter.
Add your butter into your cast iron pan and melt, being sure not to brown your butter.
Add your Garlic Butter and stir and cook together for a minute or two.
Add in the Honey and stir until combined.
Add in your Texas Pete® sauce and cook it until it bubbles.
Add your Chopped Scallions and squeeze your lemon juice in.
Add some of your seasoning, about 1 tbsp or so. Take it slow until you're happy.
Add your chopped Parsley.
Add your Salmon into the Juke Joint Butter gently and baste it.
Serve with cooked rice and grilled vegetables.
