In a large bowl, combine 3 c flour, baking powder, salt, butter, and water. Mix with a spatula until the dough forms a smooth ball. Cover bowl with a warm, damp towel for 10 minutes.
Flour surface. Transfer dough and flour top. Form dough into a disc. With a knife, cut into 12 pieces. Roll each piece into a ball.
Place one ball onto floured surface and dust with a little flour. With a rolling pin, roll into a 6”-8” diameter disc, rotating and flipping the dough occasionally.
Set cast iron skillet over medium-high heat. Drizzle with olive oil. When skillet is heated, carefully lay one tortilla in pan. Allow to sit until it starts to bubble up, ~45 seconds. Flip and cook for another 30-60 seconds. Place finished tortilla on a plate, covered with a towel, while you cooking remaining tortillas.
